Egg Dosa

Coming up with another South Indian recipe, Egg Dosa. This is another simple twist to the normal Dosa. I prepare this usually when I don't have any side dish ready for the dosa or when bored with having dosa's with chutney's. You can use the left over dosa batter too.

Here we go...  :)





Ingredients

Dosa Batter

2 Eggs

Salt to taste

Onion - 1 finely chopped

Oil

Pepper Powder


Method

1.  Beat 2 eggs in a bowl and add salt and chopped onions to it. Mix well.

2. Spread the dosa batter on the tava as you usually do. Add a spoon or 2 egg mixture on top of the dosa and spread it over it with a spoon.

3. Flip the dosa and cook on other side too.

4. Shift it to the plate and sprinkle some pepper powder on top of the dosa.

5. Yummy and Tasty Egg Dosa is ready to serve.

Prawns Rava Fry

Here's the recipe of Yummy and Spicy Rava Tava Prawns Fry.


Ingredients

100g Prawns, cleaned

Red chilli powder- 2-3 tsp

Turmeric powder- 1/4 tsp

Salt to taste

Amchur powder- 1/2 tsp

Oil for frying

Semolina/ Suji/ Rava for coating

Method

1. Clean the prawns and wash it properly.

2. Make a paste of red chilli powder, haldi, amchur powder and salt.

3. Apply the above paste to the prawns and  its better to marinate atleast for half an hour.

4. Heat about 3 tsp oil in a pan or tava.

5. Meanwhile coat the marinated prawns with rava / sooji and place it on the tava/pan. Fry on both sides till they are done. Add more oil if necessary.

Spicy and yummy Rava Tava Prawns fry is ready to serve.

Channa Dal Kheer/ Payasa


Channa Dal or Bengal Gram Kheer is an unique and delicious traditional kheer prepared mostly during festival season.

Here the recipe of yummy Channa Dal Payasa/ Kheer.

Ingredients

Channa Dal (Bengal Gram) - 1 cup

Grated coconut - 1 cup

Jaggery 3/4 cup

Cardomon powder - 1/2 tsp

Cashew nuts and raisins

Ghee - 2 tsp



Method

1. Wash and soak channa dal for atleast 30 mins.

2. Pressure cook this soaked channa dal till it becomes soft.

3. Meanwhile grind the grated coconut with water to a paste and strain thick coconut milk and keep aside.

4. When the channa dal is cooked, slightly mash them and add jaggery and mix well and cook it in a low flame till jaggery blends well.

5. Pour coconut milk to the channa mixture and bring it to a boil or till the kheer thickens a bit.

6. Remove the kheer from the flame and shift it to the serving bowl.

7. Garnish with ghee roasted cashews and raisins.

8. Delicious Channa Dal Kheer/ Payasa is ready to serve.

The kheer thickens when it gets cold and the taste gets better too.

This Kheer goes very well with Pooris.

Aloo Gobi Masala

Here's the recipe of simple Aloo Gobi Masala.





Ingredients

2 cups cleaned and chopped cauliflower

1 cup potatoes cut in cubes

2 medium sized onions, finely chopped

3 tomatoes chopped

1- 2 tsp ginger- garlic paste

1/2 tsp turmeric powder

1-2 tsp red chilli powder

Salt, to taste

3 tsp oil

2 tsp garam masala powder

fresh coriander leaves chopped




Method

1. Heat 3tsp oil in the kadai and add chopped onions and fry till it turns translucent.

2. Add ginger- garlic paste and saute for 2 mins.

3. Add chopped tomotoes and fry again for another 2-3 mins.

4. Now add chopped cauli flower and aloo to the kadai with 2 cups of water. Close the lid and cook it in a medium flame for 5 -6 mins.

5. When aloo and gobi are cooked add turmeric powder, red chilli powder , garam masala, salt and fresh coriander leaves finely chopped. Mix well and cook for another 2 mins or till water evaporates.

6. Delicious Aloo Gobi Masala ready to serve with chapati, roti or even as a side dish with rice.

Bhindi Sabji

Lady's Finger is known by many names such as Bhindi, Bhendi, Okra, Bhenda, Dheras, as so on.

Botanical name: Abelmoshus esculentus

Ingredients

200g Okra (Lady's Finger)

1 big sized onion finely chopped.

1 medium sized tomato chopped.

2-3 tsp grated coconut

2 tsp oil

Turmeric powder 1/2 tsp

Red chilli powder 1 tsp

Salt to taste.

Method

1. Clean and cut the vegetable.

2. Heat 2 tsp oil in a kadai. Add chopped onion and fry till it turns translucent.

3. Add chopped tomato and cook for 2 mins.

4. Now add chopped Okra , haldi, red chilli powder, salt and grated coconut and mix it gently.

5. Cook it in a low flame without adding water and covering the lid for another 5 -6 mins.

6. Yummy and healthy Okra sabji is ready to serve.

Serve it with rice or chapati.

Prawns Sukka / Masala



Ingredients

200 g fresh prawns

1 big onion finely chopped

2 tomotoes finely chopped

Ginger- garlic paste 2 -3 tsp

turmeric powder 1/2 tsp

red chilli powder 2-3 tsp

grated coconut 1-2 tbsp

salt to taste

3 tsp oil

dhania(coriander) powder 2 tsp

garam masala (optional) 2tsp . You can skip this if you are using dhania powder or you can equalize both. I prepared this dish without adding garam masala.


Method

1. Clean the prawns and keep aside.

2. Heat 3 tsp oil in a kadai. Add chopped onion and fry till it turns translucent.

3. Add ginger- garlic paste and fry for 3 mins.

4. Now add chopped tomotoes and cook till they become soft, that is for 2 -3 mins more.

5. Add fresh, cleaned prawns along with little water. Close the lid and cook.

6. After cooking prawns for 3-4 minutes, add red chilli powder , salt, grated coconut and dhania powder.

7. Mix well and close the lid for the prawns to cook for another 5 -6 mins in medium flame. Add more water if needed.

8. Lastly add little fresh coriander leaves ( chopped)  and mix well or garnish with coriander leaves.

Hot and spicy Prawns sukka is ready to serve.

Serve this with Rice or Neer Dosa.

Rava Fish Fry



Ingredients

2 Fish, cleaned

Red chilli powder- 2-3 tsp

Turmeric powder- 1/4 tsp

Salt to taste

Amchur powder- 1/2 tsp

Oil for frying

Semolina/ Suji/ Rava for coating


Method

1. Clean the fish and wash it properly. And make a slit on the fish.

2. Make a paste of red chilli powder, haldi, amchur powder and salt.

3. Apply the above paste to the fish and let it marinate atleast for half an hour.

4. Heat about 3 tsp oil in a pan or tava.

5. Meanwhile coat the marinated fish with rava / sooji and place it on the tava/pan. Fry on both sides till the fish is done. Add more oil if necessary.

Spicy rava fish fry is ready to serve.
