Instant Wheat Dosa with Coconut chutney Pudi(Powder)

Just back from Goa after spending a wonderful holidays. Wish I could extend my stay in my granny's house enjoying her mouth watering Goan dishes and spending the evenings near amazing and relaxing Goan beaches. School reopened today for my son and our lives are slowly getting back on track.

Since there was no time for me to soak rice and urad dal for idli's or dosa's and also I was left with no vegetables in the refrigerator, I prepared this Instant Wheat dosa and enjoyed the breakfast with the Coconut Chutney Pudi which I had prepared couple of weeks before. Will post the chutney pudi recipe soon. This is one dish which I often prepare. Guess why? Any guess ....Its simply because its ready within minutes...hahaha...Bad joke. But seriously its very simple and healthy dish with very less ingredients and bachelor's special dish after Maggie Noodles.

Mango Milkshake

Welcome Summer and Welcome Mango season.

Markets are filled with different varieties of mangoes and everyone are upto buying and trying different dishes from these wonderful mangoes. There are different varieties of mangoes but the ones I like in Bangalore is a mango variety called "Badami" and the ones which we get in Goa called "Mankura". My son was waiting for Mango season and his holidays. He knew he will get mangoes during his summer vacation and whenever we step out of the house, we, mother and son are sure upto the juice center to have a cool glass of this Mango Milkshake. I too prepare this during this season and he wants it to be presented just like the ones he gets in the juice center. Thats the demand of this generation kids. I too don't mind serving this as per his demand because usually he doesnot like milk but given it in the form of milkshake he is very happy and so do I.

Sprouted Moong Dal/ Green Gram Salad

Coming to the healthy part- Salad section, this is one salad which I often do and goes into my families tiffin boxes for lunch. Its just a tummy filling salad and so healthy. Just add any veggies you like to this and an amazing salad as per your tastebuds is ready in minutes.

I was running out of veggies in my refrigerator, so had to skip the veggies and in goes tomatoes and onions.

Semiya/ Vermicelli Kheer/ Shavige Payasa

I hope everyone out there spent a great weekend and also wishing their mom's a very HAPPY MOTHERS DAY. My Mom was out of town last week so I called her up and wished her. And every year whenever I wish her on this day, she immediately rings her mom and wishes her. She is the best Mom in the whole wide world. Well ! Everyone out there might have said the same to their mom. Because Moms are great. After marriage and now being a mom myself, I feel what exactly was her priorities in her life that's none other than her kids. Love U Mummy.

Brinjal/ Eggplant/ Baingan Ka Bharta / Badanekayi Gojju

Brinjal/ Eggplant is known by many names in India like Baingan in Hindi and Badenekayi in Kannada. I am not a big fan of these eggplants nor is my family. I only prepare sambar, bajjis and this Bharta or Gojju from brinjals. Everyone in my family loves this dish and it gets vanished in minutes. I know many people prepare this in so many different varieties but the recipe I follow is from my Grandma which I have been tasting from childhood. She used to bake this brinjals in charcoal fire. Thats the traditional way of cooking it actually. But now a days we have these kitchen friendly oven which makes our cooking much easier and we much lazier.

I bought these lovely brinjals from native while heading back to Bangalore with the one and only intention of preparing this lovely dish Baingan ka Bharta/ Badanekai Gojju.

Set Dosa/ Sabudana Dosa

Set Dosa is another variety of South Indian Dosa. Its so soft and pluffy. I learnt this receipe from my mother-in-law who is a great cook. She has a huge collection of recipes and its amazing how she keeps on adding those even at this age. This is such a wonderful recipe for breakfast and tastes entirely different from the normal dosa's. Set Dosa's cannot be made crispy. Its thick,smaller in size and extremely soft. Its a perfect dish which I love to send in my son's tiffin box. Love it anytime of the day.
